This guitar technique is sometimes called Chicken picking and the masters of the art have names like Chet Atkins or Merle Travis. Carmine plays some of their tunes but add a few others songs not always related to American culture. Everything is played on the guitare, there's just minimal drums, enough to highlight the delicate playing of Carmine. The best is to watch the videos to understand better.
